Fino sherries are aged under a blanket of yeast called flor. This yeast sometimes dies. When this happens the wine is exposed to oxygen (like Oloroso sherry) and starts to take on characteristics of nuts and leather that complement the doughy characteristics it took on under flor. When this happens the wine is called Amontillado which is a special style of sherry – beloved because it enjoys the combined complexity of characteristics from both Fino and Oloroso sherry.
The Vina AB is an excellent dry example of Amontillado, bringing the freshness of a Fino with the developed nuttiness of the Oloroso. It makes for a great aperitif.
